Fried Chicken Butt

Have you tried this before? I know for some people this is exotic, for me this is a special treat once in a while. This is a collection from the whole chicken that my friends were chopping today for a big event, I told them to keep the butts and I will prepare it for them to taste, at first they hesitated, but I insisted, so they agreed to keep it for me. Then I cooked it and here is how.

Ingredients:
1/2 kilo chicken butt ( cleaned very well)
2 tablespoon lemon or calamansi juice
1/2 cup flour
salt and pepper to taste
oil for frying

Procedure:
1. Marinate the chicken butt with lemon juice, salt and pepper for an hour.

2. Roll over the flour then deep fry until golden brown.

3. Serve hot and enjoy :-).


My friends liked it and asked for more :D

Hot and Spicy Crab

Crab stewed in coconut milk with a kick of hot and spicy flavor will surely boost your appetite. Quick and easy to prepare so please give it a try :-).

Ingredients:
1 kilo alimango
2 cups thin coconut milk ( Ikalawang piga)
1 cup pure coconut milk ( kakang gata)
thumb size ginger
1 onion
5 pieces or more cayenne pepper or siling haba
1/4 teaspoon ground pepper
salt

Procedure:
1. In a pot put the crabs,thin coconut milk, cayenne pepper, ginger, onion, salt and ground pepper, cover and cook over medium heat allowing to simmer for few minutes until the crabs turned reddish.

2.Let simmer for few minutes until fully cooked, then put the spring onion and pure coconut milk and simmer for half a minute then turn off the heat.


3. Serve it hot with rice.

Sinigang sa Mangga

Surprisingly yummy :-). Have you cooked like this before? Let me know.

Ingredients for 4 servings
1/2 kilo Salmon
5 cups water
3 green mango or more ( make sure its really sour)
2 tomatoes
1 onion
2 cups spinach leaves
cayenne pepper or siling haba
salt and pepper to taste


Procedure:
1. In a pot put all the ingredients except the water and spinach, then cover and let simmer until the salmon is half cooked.
 2. Add the water and bring to a boil for few minutes until the salmon is fully cooked then add the spinach, salt and pepper to taste and simmer until done and turn off the heat.
 3. Serve it hot.


Graham Peanut Ball


I never thought that what I imagined, turned into a delicious chocolatey and nutty sweet treat that is so addicting in every bite. This is very easy to prepare, I hope that you will try this recipe and let me know about it.

Ingredients:
1 1/2 cup graham biscuit powder
1/2 cup peanut  powder ( you can use a blender for this)
1/2 cup condensed milk (add if needed)
1 tablespoon melted butter

Procedure:
1. Combine all the ingredients until it forms a ball with a dough-like texture.

 If the mixture is too dry, add a little condensed milk.
2. Form into balls then roll over the crumbled or powdered peanuts then serve or you can wrap it with water cellophane like yema and store in an air tight jar and serve anytime you want it.


If Graham cracker is not available you can replace it with this or any biscuit the same with Graham.

Milkfish in Olive oil (slow cook)

A mouth watering dish sent to me by my friend Wildvine, looked so tempting, making my tummy grumbles and my mouth salivate :-). I will try this recipe soon God willing. Thanks Wildvine for sharing this.


Ingredients:
2 milkfish -Dressed and cut according to your desired size (salted and peppered)
10 pieces Cherry tomatoes
Olive oil enough to cover the fish and tomato or any oil available in your pantry
2 pcs. Of bay leaves (laurel)
 1.5tbsp. salt
1/2 tbsp. pepper
Half an onion (julienne)
half of Bell pepper.


Procedure:
Put all the ingredients in a glass baking dish. Cover with aluminum foil and bake in a preheated oven for 3 hrs. in 350F. Make sure your milkfish is a little bit salty since oil make the salt wash away from the fish. I will suggest salt and pepper the fish inside and out, half hour before you bake it. Enjoy it with steamed rice or fried rice.

Ginataang Hipon

Easy to prepare shrimp dish for everybody specially to those who are just learning how to cook, you can try this and get a perfect result :-).

Ingredients:
1/4 kilo shrimps
1/2 cup pure coconut milk
3 cloves garlic
1/2 onion
1/2 piece bell pepper
salt and pepper to taste
spring onion

Procedure:
1. Saute the  garlic and onion then add the belle pepper and shrimps and simmer for 2 minutes over high heat stirring constantly.
2. Add the coconut milk, spring onion salat and pepper to taste then simmer until cooked.
3. Serve it hot.

Crispy Pork Belly

This recipe is related to lechon kawali but this one is coated with flour making it lesser oil blasting while frying it.  I boiled it before frying it and the result is, crispy outside, tender and juicy inside. Try it this way and let me know about the result.

 Ingredients:
1 kilo Pork Belly
5 cloves garlic
1 onion
2 tablespoons calamansi or lemon juice
salt
black pepper
water ( enough to make the meat tender)
flour


Procedure:
1. In a pot put the garlic, onion, pork belly, salt, pepper and water then bring to a boil, simmer until the meat is tender.
2. Remove from water, sprinkle with lemon or calamnsi juice then coat it with flour, deep fry until golden brown.

3.Slice into bite size then serve with or without a sauce.



Pancit a la Palabok



My friends and I were craving for palabok but we do not have ingredients for it, so I just made this pancit to at least satisfy our cravings, we enjoyed it with a squeezed lemon, since we do not have calamansi. I will cook this again because it is really yummy.

 Ingredients for 6 servings:
1/2 kilo pancit  ( egg noodles)
1/2 kilo pork sliced into bite size
1 carrot sliced into strips
1 onion
3 cloves garlic
salt and pepper to taste
2 cups water
1/2 cup chopped spring onion
3 hard boiled eggs ( wedges)

Procedure:
1. Slice the pork by separating the fat and meat. Toast the fat until golden brown then add the lean meat and pan fried until brownish too, then make a space in the pan to saute the garlic and onion. Then stir in the toasted pork.

2. Add the salt and pepper then simmer for 2 minutes, remove some meat for toppings later.
3. Add the water and bring to a boil, once boiling add the carrots and pancit then stir well and simmer until cooked.
4. Put in a serving plate then top with some meat, hard boiled eggs and spring onion then serve it hot.

Green Mango Juice






A refreshing green mango juice shared to me by Miss Sheru. It's m first time to drink it and I said "wowwww, this is awesome!" You will definitely like this, so don't hesitate to try the recipe.


Ingredients:
1 litre cold water
3 green mangoes ( manibalang)
3/4 cup sugar

Procedure:
1. Slice the mango then put in a blender together with the sugar and water then blend it well.
2. After blending, sift it by using a strainer to remove the residue.
3. Pour in a serving glasses then serve with a smile :-).

Deep Fried Salmon

This crispy salmon goes well with vegetable salad.

Ingredients for 2 servings:
250 grams salmon
1 tablespoon lemon or calamansi juice
salt and pepper
 oil for frying

Procedure:
1. Clean the salmon and sprinkle it with lemon juice, salt and pepper to taste.
2. Heat the  oil then deep fry the salmon until cooked. 
3. Serve it hot with vegetable salad.
