Bulcaching


During my college days ( Davao City)I remembered one eatery near my school where my friends and I used to eat because of their dish which they called "BULCACHING" the soup is really addicting, it is a combination of  beef shank and ox feet cooked until it i very tender, one of the food server said it's a combination of bulalo and balbacua, I am craving for that soup that's why I tried cooking it and wow gotcha! Yummy! You can try it too and see it for yourself.

Ingredients:
1/2 kilo beef shank
1/2 kilo ox feet ( paa ng baka)
1 onion
thumb size ginger ( crushed)
1 teaspoon whole black pepper
1/2 kilo Chinese cabbage or petsay
1/4 cup fish sauce ( patis)
water ( enough to make the meat tender and soupy)
chili ( siling haba)
Spring onion as needed
salt and pepper to taste

Procedure:
1. In a pressure cooker put the onion, black pepper, ginger, fish sauce, chili, ox feet and beef shanks, then turn on the stove to medium heat and wait until it starts to simmer. Let simmer until the pinkish color of the meat is gone then mix well and simmer again for another 5 minutes.
2. after this process increase the heat then add the water and simmer  for 30 minutes (pressure cooker) or if pressure cooker is not available simmer it for 90 minutes or until tender.
3. When the meat is tender add the Chinese cabbage, spring onion, salt and pepper then simmer for a minute and turn off the heat.
4. Serve it hot.

Cheesy Spaghetti

 This is an all time favorite of my family, the cheesy flavor will make you ask for more. Try this recipe even if you do not like spaghetti I believed you will find this palatable when you taste it.

Ingredients for 6 servings
1/2 kilo spaghetti ( cooked according to its packaging procedure)
4 cloves garlic
1 onion
1/4 kilo ground beef
2  cups tomato sauce
1 1/2 tablespoons sugar
1/2 cup Nestle Cream
1 cup grated cheese
pepper to taste


Procedure:
1. Saute the garlic and onion then add the ground beef and simmer for 5 minutes over medium heat.
2. Add the tomato sauce, sugar, and ground pepper then simmer for few  minutes
3. Add the Nestle cream and cheese then simmer until the cheese is melted then add the spaghetti and mix well.
4. Put in a serving plate then serve or you can  top with extra cheese before serving.

Prawns with Oyster Sauce

 This is simple and easy to prepare, but the oyster sauce made this dish so scrumptious. "Extra rice please " that's what we've said while eating this. :-)

Ingedients:
1/2 kilo prawn
1 onion
2 tomatoes
3 cloves garlic
2 tablespoons oyster sauce
ground pepper to taste
some spring onion

Procedure:
1. Saute the garlic, onion and tomatoes then add the prawns and stir until it turned dark oranged.
2. Add the oyster sauce, ground pepper and spring onion then simmer until cooked.
3. Serve it and do not forget to smile :-).

Fried Roe

 Roe or hard roe is the fully ripe internal egg masses in the ovaries, or the released external egg masses of fish and certain marine animals, such as shrimp, scallop and sea urchins. As a seafood, roe is used both as a cooked ingredient in many dishes and as a raw ingredient. The roe of marine animals, such as the roe of lumpsucker, hake and salmon, is an excellent source of omega-3 fatty acids.

Today there are lots of roe at the market which is very fresh, so I bought some, since it's been a long time that I don't have it. I cooked it simply by just frying it.

Ingredients:
1/4 kilo roe
1 tablespoon lemon or calamansi juice
salt and pepper to taste
oil for frying


English = Roe
Tagalog= itlog ng isda
Visayan- bihod
Procedure:
1. Slice the roe into bite sizes then sprinkle with lemon juice, salt and pepper.
2. Heat the oil then fry it until cooked.




3. Serve it with rice and enjoy!



Pork Chop Sinigang



Sinigang is one of the best Filipino recipes. The taste is distinctively delicious and the vegetables in it goes perfectly with the soup’s flavor. This is the dish that is number 1 in my list because the flavor is just perfect!

Ingredients:
1 kilo pork chop
1/4 kilo okra
1 onion ( sliced)
2 tomatoes ( sliced)
1 bunch swamp cabbage ( Kangkong)
8 cups water (add if necesssary
some cayenne pepper ( siling haba)
salt to taste
3/4 cup tamarind extract ( Boil 1/4 kilo of tamarind with 1 1/4 cup water then extract it)


Procedure:
1. In a pot,  put the pork chop, onion and tomatoes then allow to simmer for few minutes .
2. Add the water and bring to a boil, then simmer until the meat is tender.
3. Increase the heat then add the okra and simmer until almost cook.
4. Add the kangkong and chili then simmer until cooked.
5. Add the tamarind extract and salt to taste.
6. Serve it hot.

Pork and Beans

I loved pork and beans when I was a kid, so today I gave it a try to cook pork and beans and it's really delicious. I am smiling while eating this good dish while remembering my childhood memories eating this with my childhood friends. Try this recipe, it's better than canned ones.

Ingredients for 10 servings:
1/2 kilo Speckled or kidney beans
1/2 kilo pork ( any part that you like to use)
3 cloves garlic
1 onion
salt and pepper to taste
water

Procedure:
1. Put the beans and water in a pan then boil until really tender. Make sure that the water 6 inches  above  the level of the beans. You can add water if necessary. When the beans are tender set aside.
2. Saute the garlic and onion then add the pork and simmer until cooked.
3. Add the beans, salt and pepper then simmer until the texture is perfect.
4. Serve it hot.



Baked Embutido



Embutido is one of the most popular food in the Philiipines, this is Filipino's version of American meatloaf. It is very tasty and we considered it a  special dish for gatherings. I made for lots of guests so if you want to make just for few persons just adjust the ingredients.Try this and enjoy.


Ingredients for 50-60 servings:
1 1/2 kilos ground pork
1 cup raisins
3/4 cup green peas
2 carrots (minced)
3 potatoes (minced)
2 onions ( minced)
1 head garlic (minced)
1 cup bread crumbs
1 teaspoon ground pepper
1 cup ketchup
salt to taste

for filling:
5 hard boiled eggs (sliced)
10 pieces hotdog

Procedure:
1. Mix all the ingredients except - for filling.


2. Divide the mixture into 5 then place it in an aluminum foil and flatten it. Put the  hotdog & sliced boiled eggs in the middle of the flat meat mixture. Roll the mixture until it covers the filling then locked the foil tightly.




3. Put 2 cups of water in a baking pan then put foil then put the embutido and cover it with another foil and bake it for 40-60 minutes at 220 C. (Preheat the oven)

4. Remove from the oven and allow to cool before slicing it, then serve.




Note: Slice it when it is already cold for best result.
If oven is not available, of course you can steam this.

Caramelized Banana with Cheese


Simply yummy!

Ingredients:
1/2 kilo banana ( any cooking banana, but saba is the best if it is available in your place)
1/2 cup white sugar
1 teaspoon butter
1/2  cup shredded Muzarella cheese

Procedure:
1. Slice the banana to your desired size then fried it. Set aside.
2. Caramelized the sugar and butter.
3. When it is done pour over the banana, then top it with shredded cheese then serve.

Health Benefits of Garlic





HEALTH BENEFITS
                One of the most common ingredients in cooking is garlic. Awarded as the "Wonder Drug Among All Herbs", garlic is used to reduce high blood pressure and other heart related problems such as atherosclerosis (hardening of the arteries.) It could prevent many types of cancer including colon cancer, rectal cancer, and stomach cancer. Garlic also builds the immune system preventing and treating bacterial and fungal infections. 

HOW TO PLANT:
                Garlic is an herb and is very easy to grow. It is perfect for kitchen garden and you can raise your own supply the whole year round. But in areas with 4 seasons, garlic is best grown in the fall.
Here are the easy steps:
                1. Pick a variety that you want to grow. I suggest you choose the native small ones because they're more aromatic and flavorful than those big varieties.
                2. Plant garlic cloves 8 inches apart, about 3 inches deep in a loose, very fertile soil. Water only if the soil gets dry. You will begin to see the shoots sprouting within a couple of weeks.
                3. When several of the lower leaves start to turn brown then that's the time to harvest. Gently pull out the whole plant to see the bulb. Store the garlic heads in a cool, dry place.

Hot and Spicy Seafood


 If you love hot and spicy flavor, then you must try this recipe.

Ingredients:
3 crabs
1/4 kilo shrimps
1/2 kilo clams
1/2 cup Chili Sauce ( I used my homemade chili sauce)
4 cloves garlic
1 onion
salt and pepper to taste
seafood
Procedure:
1. Saute garlic and onion then add the seafood and stir until the color changed.
2. Add the chili sauce and simmer for 2 minutes then stir.
3. Add salt and pepper to taste then stir and cover until cooked.

4. Serve it hot.
