Bangus Paksiw


This milkfish paksiw was cooked by Nanay Angelina Mangiliman from Pampanga, a very good cook and a loving mother of my friends. I visited their house few times before, in Pampanga, Philippines. All the food that she cooked for us tasted excellent. Really yummy! Now here is her bangus paksiw for us to enjoy :-).

Ingredients:
1 big milkfish
thumb size ginger
3 sweet chili or siling haba
1/2 cup vinegar
Magic Sarap to taste

Procedure:
1. Clean the fish by removing the gills and innards then slice to your desired size and wash very well.
2. Put all the ingredients in a pot then bring to a boil, then simmer over medium heat until done.
3. Serve hot and enjoy:-).

Crispy Pork Tail


Exotic crispy pork tail, who will dare to eat this? I can eat this! I know there a lot who will like his recipe, so this is for all of you.

Ingredients:
5 pork tail
2 tablespoons lemon or calamnsi juice
1/4 teaspoon ground pepper
2 tablespoons soy sauce
salt

Procedure:
1. Combine all the ingredients and marinate over night.
2. Deep fr until golden brown and crispy.
3. Serve hot with your favorite dipping sauce, yummy!!

Baked Eggplant Rings

I've got the idea of this from an appetizer section at a buffet restaurant where we ate last month, when I saw it I said "wow so cute". So easy to make if you have oven, just put it there and do karaoke/videoke while waiting for it to be cooked :-) No hassle! Here is the recipe for it.

Ingredients for 2-3 servings:
1 big eggplant
1/2 cup ketchup
1/4 cup mayonaise

Procedure:
1. Preheat the oven at 200 degrees celcius then cut the eggplant into rings.

2. Grease the baking pan then arrange the cut eggplant and top it with ketchup.

3. Bake it for 40 minutes or until done. When it's cooked, remove from the oven then put mayonaise and serve.


For a shiny effect you can spray oil to the eggplant before baking.

Pineapple Fritter

A simple dessert that you can cook with your kids.

Ingredients
1 pineapple ( Slice into rings)
1 cup bread crumbs
2 eggs ( beaten)


Procedure:
1. Peel the pineapple and slice if you are going to use fresh, if you are going to use in can just drain it.


2.  Dip the pineapple in the beaten egg then dip in the bread crumbs


3. Deep fry until done.
4. Serve anytime you want it.
 You can decorate some for your kids with chocolate syrup and whip cream :-)




Beef Steak Filipino Style




I like a beef steak with lots of ringed onions on it. Choose a tender meat for your steak for best result, like tenderloin and sirloin. Here is the recipe for my beef steak.


Ingredients:
1/2 kilo beef (sliced)
1/4 cup soy sauce
2 tablespoons calamansi or lemon juice
2 onion (cut into rings)
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Marinade the beef with the soy sauce and lemon for 30 minutes. After 30 minutes remove the beef from the marinating sauce, then set aside the sauce for cooking later.
2. Pan fry the meat and set aside.
3. In a pan saute the onion and remove some for toppings later.
4. Add the pan fried beef, ground pepper, and the marinating sauce and stir occasionally,then simmer until done.  Add salt if necessary.
5. Serve it hot with ringed onion on top.

Baked Pork Adobo



Adobo in the morning, adobo in the afternoon and adobo in the evening. If our companions are adobo addicts :D you should find ways to prepare it in different ways, and here is one way that I tried. Approved!

Ingredients for 10 servings:
1 kilo pork
1/2 cup soy sauce
1/4 cup vinegar
6 cloves garlic
1 teaspoon peppercorn ( pamintang buo)
a pinch of chilli flakes

Procedure:
1. Combine everything then mix well and put in a baking pan.

2. Bake at 180 degrees celcius for an hour or until done. ( You can mix after 30 minutes for an even brownish color)
3. Serve hot.

Optional :
You can slice some onions and top it on the adobo 10 minutes before you turn off the oven.

Ground Beef Pineapple Guisado


An easy to cook recipe and also budget friendly yet yummy.I used fresh pineapple and I garnished it with red bell pepper.

Ingredients for 3-4 servings:
1/4 kilo ground beef
1 potato
1 carrot
2 cloves garlic
1/2 piece onion
1 cup pineapple tidbits
Salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the ground beef and continue sauteing for 4 minutes.
2. Add the carrot, potato and pineapple then continue to simmer until done.
3. Dash with salt and pepper to taste simmer then turn off the heat.
4. Serve it hot.

Sweetened Banana and Pineapple


A delicious combination for your dessert or snack. I love how the flavors from banana and pineapple blended well together. Delicious and satisfying for our sweet tooth.

Ingredients for 4 servings
1/2 kilo banana ( saba,banana terra or any cooking banana)
2 cups pineapple tidbits or chunks
2 cups water
1 cup sugar

Procedure:
1. Put the sugar in a pot and allow to caramelized then put the water and simmer until the sugar is melted.

2. Put the banana and pineapple then cook until done.

3. When you are almost finish cooking increase the heat to high to decrease the liquid to thicken the syrup.

4. Serve anytime you want it.

Chicken Afritada a la Caldereta


Afritada and caldereta in one? Yes almost like that.It is the Nestle cream from caldereta that made this afritada creamy and so yummy. That is why I am inviting you to try this recipe, enjoy cooking.

Ingredients for 5 servings:
1/2 kilo chicken
2  potatoes
2  carrots
1 bell pepper
1 onion
3 cloves garlic
3 tablespoons soy sauce
1 cup tomato sauce
1 cup water
1/2 cup Nestle Cream
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken and simmer until the pinkish color is gone.
2. Add the soy sauce and tomato sauce then simmer for few minutes, stirring occasionally.
3. Add water and let it boil, then add the potatoes and simmer for 2 minutes.
 4. Add the carrots, bell pepper, salt and pepper then simmer until almost done then add the nestle cream and simmer for a minute then turn off the heat.
5. Serve it hot.

Aloha Shrimps


A dish that will surely lighten up your day.  Easy to prepare and delicious. Try this and enjoy!

Ingredients:
1/2 kilo shrimps ( cleaned)
1 cup pineapple chunks
4 cloves garlic
1 tablespoon oyster sauce
1/4 cup water
bell pepper
spring onion
Salt and pepper to taste

Procedure:
 1. Saute the garlic then add the shrimps and simmer for few minutes, then add the water and let boil.
2. Add the pineapple chunks and simmer for 3 minutes then add the oyster sauce and simmer until thickens.
3. Add the bell pepper and onion then simmer and add salt and pepper if necessary before turning off the heat.
4. Serve with rice.
