Chicken Steak


I love cooking Filipino style pork steak and beef steak so I tried applying it in the chicken, and it turned out excellent! Try it!

Ingredients:

500 grams chicken breast
1/2 cup soy sauce
2 tablespoons lime juice or calamansi
2 onions ( sliced into rings)
1/4 teaspoon ground pepper

Procedure:
1. Wash the chicken breast then slice into bite size. Set side for 15 minutes to allow the water to be drained. Then marinate with, soy sauce, lime juice and ground pepper for 20 minutes. After 20 minutes remove the chicken meat from the marinating sauce, but  do not throw the marinating sauce. We will use it later.
2. Saute the onion then remove some for garnishing later, add the chicken and simmer for 5 minutes then add the marinating sauce, and continue simmering until done.
3. Serve it hot topped with some onion.

Scrambled Egg with shrimps and Hotdog


Very easy to cook recipe, even your kids will enjoy cooking this with you, let them help and have fun cooking.

Ingredients:
4 eggs ( beaten)
2 hotdog
1/2 cup shrimps
1 onion ( sliced thinly)
salt

Procedure:
1. Saute the onion, then add the shrimps and hotdog, add a little salt to taste, simmer until it is cooked.
2.  Increase the heat, then stir in the beaten eggs, stir and mix well, continue stirring until done.
3. Serve hot, you can garnish it with spring onion.

Special Adobo sa Gata

Originally, my friends and I planned to cook chicken curry, but unfortunately there is no curry powder, so I decided to make it "adobo sa gata" which is also yummy.

Ingredients:
1 kilo chicken
1/2 cup soy sauce
1/2 cup vinegar
2 potatoes
1 carrot
1 bell pepper
1/4 teaspoon ground pepper
6 cloves garlic
1 tablespoons ginger strips
1 cup pure coconut milk
 salt and pepper to taste

Procedure:
1. Saute the garlic and the ginger then add the chicken and soy sauce, simmer until chicken meat absorbed the color of the soy sauce, then add the ground pepper and vinegar, cover and simmer for 3 minutes.
2. Add the potatoes and carrot, stirring occasionally until it is almost done,  then add the bell pepper , salt and pepper to taste, then  simmer until vegetables are tender.

3. Pour in the coconut milk then simmer until done.
4. Serve it hot with rice :-).

Bread Pudding



Leftover bread should not be wasted so I make it into bread pudding. A delicious snack for everyone!

Ingredients:
5  cups cubed bread
1 1/2 cups  milk
3/4 cup sugar
1/2 teaspoon baking powder
4 eggs ( lightly beaten)
2 tablespoons vanilla flavor
1/2 teaspoon oregano flakes


Procedure:
1.Soak the bread with milk for few minutes,  then combine all the ingredients.
2. Mix well with your hands and then pour in a greases baking pan. Chill for 30 minutes before baking
3. Preheat the oven then bake the pudding mixture at 180C for 45 minutes or until done.
Serve with coffee or tea.

Don't waste food!! It's part of God's blessings. Learn to recycle the leftovers.

Mixed Vegetable in Coconut Milk

Try this pure vegetable dish, but still delicious.

Ingredients:
1/2 kilo pumpkin or squash
1 big eggplant
1 chayote
1 bale spinach
1 onion
2 cups pure coconut milk
1 teaspoon ginger strips
2 cups water
salt

Procedure:
1.In a pot put the water, ginger, salt and onion, let it boil
2. Once boiling add the pumpkin, and eggplant, simmer until soft.
3. Add the chayote then simmer for 3 minutes.
4. Add the spinach then simmer until then.
5. Pour in the coconut milk and let boil for a minute then turn off the heat.
6. Serve it hot.

Pan Fried Prawn


Pan frying is cooking in just very little oil or butter allowing the subject to be toasted a little. This pan fried prawn is simple but it locked all the freshness and flavors as I pan fried it. It is juicy and tasty after cooking. Try it.

Ingredients:
200 grams ( slit at the back)
3cloves garlic ( crushed)
1 onion ( diced )
1 tablespoons butter
1 teaspoon lemon juice
salt and pepper to taste

Procedure:
1. Heat the butter then pan fried the prawn, dash with salt and pepper to taste.
2. When it is almost done add the lemon juice then continue pan frying until done.
3. Remove from the pan then saute the garlic and onion, once sauteed pour over the prawn then serve it hot.

Special Nilagang Baka ( Bulalo Style)


For me nothing beats the taste of Filipino beef stew ( nilagang baka) specially if it is bulalo style, because the taste of the corn neutralizes the entire taste of the soup making it so delicious.  Try it.

Ingredients:
1/2 kilo beef
3 yellow corns
5 potatoes ( cut into halves)
200 grams grean beans or Baguio beans
3 cayenne pepper or siling haba
1/2 kilo Chinese cabbage
2 stalks spring onion
1/4 teaspoon ground pepper
1 onion
1 inch ginger
2 knorr beef cubes ( optional)
3 litres water or more ( its up to you)


Procedure:
1. In a pot put the onion, ginger, chili, beef cubes,ground pepper and beef, then cover,  over medium heat let it boil, when it starts to boil let it simmer for 8 minutes, then add the water and let it boil.
2. Simmer the meat until tender, then add the corn and continue cooking until it is almost done.
3. Add the potatoes and simmer until tender then add the green beans and simmer for 2 minutes.
4. Add the Chinese cabbage and spring onion, simmer until done.
5. Serve it hot.

Pork with Mushrooms


I cooked this last year  for a group of friends but I was not able to post, I thought of sharing it even if it is not that healthy  hahahahaha as you can see the fat of the pork is shining like a knight in a shining armor hahahahahaha, anyway just if you want to get an idea of what to cook here is the recipe, you can replace the pork belly with pork lean meat, chicken or beef.

Ingredients:
1/2 kilo pork belly (  cut into bite pieces)
1/2 kilo fresh button mushrooms
3 cloves garlic
1 onion
1/2 cup soy sauce
1/2 teaspoon ground pepper

Procedure:
1.Saute the garlic and onion, then add the pork, soy sauce and ground pepper, then simmer letting the pork soak the color of the soy sauce.
2. Continue to simmer until tender , stirring occassionally
3. When it is almost done put the mushrooms, simmer until cooked.
4. Serve it hot.

Stir Fried Celery


Celery is a good source of fiber which is good for digestion, so I decided to stir fried it with fish to add flavor in it.

Ingredients:
1 fried round scad fish ( galunggong)
4 cups celery cut into an inch length
3 tablespoons soy sauce
1 onion
2 cloves garlic
salt and pepper to taste



Procedure:
1. Flake the fish and set aside.
2. Saute the garlic and onion then add the fish and soy sauce.
3. Increase the heat then add the celery and stir fry it until done.
4. Add salt and pepper to taste.
5. Serve it hot.

Shrimp Nigiri Sushi


This is very easy to make and  a good way to start making sushi if you are a first timer, nigirizushi is a kind of sushi made by pressing the rice with a hand and putting the topping draped over it. The popular toppings for this kind of sushi are salmon, tuna and shrimps. Let us start with salmon, I will post more about this soon with different topping.

Ingredients
15 pieces shrimps
3 cups cooked sushi rice


Procedure:
1.Boiled the shrimps then deshelled it and put a cur in the belly to expand it when you are going to top it on rice.
2. With your hand get a certain amount of cooked sushi rice then form it into oblong by pressing it between the palms of the hand, then put the shrimp.


3. Repeat the same process until you attain your desired number of nigiri that you want to serve.

4. Serve it with your favorite sushi sauce.

Here is how to cook the sushi rice:
1. Wash the rice then put water, vinegar and sugar let it boil and cook like the normal rice that we eat during our meals.
2. When the rice is cooked let it cool, then prepare other sushi ingredients.
if sushi rice is not available just mix 2 cups of glutinous rice with 3/4 cup of normal rice.
