Bihon with Roasted Chicken

I cooked this because I have some leftover roasted chicken (lechong manok), I chopped it and used for this recipe, of course you can use a meat that's not leftover.

Ingredients:
1/2 kilo rice noodles
1 cup chopped roasted chicken
1  carrot ( strips)
1  onion
3 cloves garlic
1 cup sliced cabbage
6 cups water
salt and pepper to taste

Procedure:
1. Saute garlic and onion, then add the chopped roasted chicken, simmer for few minutes.
2. Add the water, cover until it boils then put the bihon, simmer for 3 minutes.
3. Add the rest of the ingredients simmer until it's cooked over medium heat.
4. Serve it hot.


Don't waste food!! It's part of God's blessings. Learn to recycle the leftover.

Pininyahang Manok with Avocado



Something that I've experimented and it turned out ok, delicious pininyahangmanok with avocado, a very good twisted recipe. Try it.

Ingredients:
1 kilo chicken
2 cups  pineapple juice
1 cup nestle cream or light cream
1 onion
4 cloves garlic
1 cup sliced avocado
salt and pepper to taste

Procedure:
1.Saute the garlic and onion then put the chicken and simmer until pinkish color is gone.
2. Add the pineapple juice and cover and allow to simmer for few minutes stirring occasionally until the chicken is fully cooked.

3. Add the avocado,  Nestle Cream, salt and pepper to taste then simmer for 1 to 2 minutes and turn off the heat.

4.Serve it hot with rice.

Mely's Kitchen Goto



Goto is a kind of porridge in the Philippines with ox tripe that is cooked tenderly, making this porridge very delicious.

Ingredients:
1 cup rice
1/4 kilo ox tripe ( tuwalya ng baka) (boiled and tender)
1/4 cup ginger strips
3 cloves garlic
1 onion
salt and pepper to taste
7 cups water (add if needed)

Toppings:
toasted garlic
hard boiled egg
chili flakes ( if you want it hot)
spring onion, etc.

Procedure:
1.  Saute the garlic, then ginger and onion until brownish then add the pre-cooked ox tripe then simmer for few minutes.


2. Add the rice, salt and pepper then simmer for few minutes.
3. Add the water, then cover, stirring constantly so that the rice will not stick at the bottom of the pot.
4. Continue simmering until the rice is so tender making the porridge thick in texture. Add more water if necessary.
5. When it is done, serve it hot with your toppings.

Quail Eggs coated with ground beef


Simple and easy to prepare, good for the kids specially during weekend you can spend time with them by cooking this together, let them participate and enjoy a good time with your family.

Ingredients: for 6 servings:
12 hard boiled quail's eggs (remove the shell)
1/2 kilo ground beef
2 tablespoons flour
1 beaten egg
1 cup bread crumbs
2 calamansi
salt and pepper to taste

Procedure:
1.Combine the ground beef, flour, calamansi juice, salt and pepper. Mix it well.
2.Divide the meat into 12 portions, then wrap each egg well.
3.Dip it in beaten egg then roll over the bread crumbs and deep fry until golden  brown.
4. Serve it hot.

Strawberry Popsicles


This is very easy to make and the kids will enjoy this treat.

Ingredients for 8 -10 popsicles:
20 grams strawberry flavored gelatine
2 cups fresh or evaporated milk
3 cups water
3/4 cup sugar
Popsicle sticks
plastic disposable cups

Procedure:
1. In a pan put the water, sugar and gelatine, mix well until dissolved then turn on the stove over medium heat and bring to a  boil, then simmer for 2 minutes and turn off the heat. Let cool.
2. Add the milk and stir well then pour into the plastic cups the amount that you want to make then put the popsicle stick and refrigerate until hardened. J


3. Remove from the plastic cups then serve and enjoy.

Pork Liver Steak


 An 85 grams (3 oz.) pork liver is abundant in protein and other nutrients like phosphorous, vitamin B-6, zinc, vitamin C, thiamin, niacin and folate with 140 calories.
Take note that as little as 85 grams we can get  abundant nutrients, so do not eat too much of pork liver to maintain a healthy diet.
Here is a simple recipe to enjoy.

Ingredients:

1/2 kilo pork liver ( sliced to your desired size)
2 tablespoons calamansi or lemon juice
1 onion
3 cloves garlic
1/2 piece bell pepper
salt and pepper to taste

Procedure:
1. Pan fried the liver until half cooked then set aside.

2. Saute the garlic and onion then add the pan fried liver, bell pepper, lemon or calamansi juice, salt and pepper to taste then simmer until cooked.
3. Serve it hot with rice.


Simple Refrigerator Cake


If you love mango float, you will surely love this simple and easy to make refrigerator cake. This is also good for your children's party, you can make some of this in a transparent party cups.

Ingredients for 4 servings:
1 pack graham crackers or any chocolate cracker
1 1/2 cup Nestle Cream
1 1/2 cup condensed milk

Procedure:
1.Powderize the crackers then set aside
2. Mix the Nestle cream and condensed milk.
3.Layer the powderize cracker, cream and milk mixture in a serving glasses then refrigerate for few hours before serving.
4. Serve it with decoration and enjoy.

Brussels Sprouts with Shrimp and Tomato

This is a perfect dish anytime of the day. I love the taste of this vegetable and admire its nutritional and medicinal value.

Brussels sprouts, as with broccoli and other brassicas, contains sulforaphane, a chemical believed to have potent anticancer properties. Although boiling reduces the level of the anticancer compounds, steaming and stir frying do not result in significant loss.

Brussels sprouts and other brassicas are also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells.

Consuming Brussels sprouts in excess may not be suitable for heart patients taking anticoagulants since they contain vitamin K. In one such reported incident, doctors determined that the reason for a heart patient's worsening condition was eating too many Brussels sprouts."

Ingredients for 4 servings:
100 grams brussels sprouts
1 cup cherry tomatoes
1/4 kilo shrimps ( remove the shell and clean well)
3 cloves garlic
2 tablespoons olive oil or any cooking oil
salt and pepper to taste


Brussels sprouts

Procedure:
1. Pan fried the brussels sprouts then set aside.

2. Saute the garlic then add the shrimps and saute for a minute then add the tomatoes and brussels sprouts and simmer for a minute over medium heat.
3. Sprinkle with salt and pepper to toaste then simmer and turn off the heat.
4. Serve it hot.

Tapioca Mango Salad

 An easy to prepare and budget friendly dessert for the whole family to enjoy. Made from tapioca pearl or sago added with some ingredients to make it more irresistible. You will not regret if you will try this :-).

Ingredients for 6 servings
3 cups cooked white sago or tapioca pearl
1 1/2 cup diced mango
3/4 cup condensed milk
1 cup Nestle cream

Cooked tapiocca
 Procedure:
1. Combine all the ingredients  then mix well.
 2. Refrigerate for few hours.
 3. Then serve it with a  smile :-).


Note: If this is too dry for you, just add fresh or evaporated milk and a little sugar.

Meatballs with Ham and Cheese

I copied my embutido recipe and made it into meatballs then I stuffed it with ham and cheese. Awesome!

Ingredients:
1/2 kilos ground pork
1/2 cup raisins
1 big carrot (minced)
1 big potato (minced)
1 onion ( minced)
5 cloves garlic (minced)
1/2 cup bread crumbs
1/2 teaspoon ground pepper
salt to taste
extra bread crumbs for breading

 filling:
cheddar cheese (diced)
sweet ham (diced)

Procedure:
1. Mix all the ingredients except - for filling.



2. Form into balls and insert in the cheese and ham then seal it by pressing and rolling the meatballs with your palms.
3.Roll over the bread crumbs then deep fry until golden brown.
4. Serve it hot and enjoy.

The most common juice that's available at the market either canned, bottled, or freshly squeezed. Popular for its high Vitamin C content, that's one of the reasons why I love this juice so much. Delicious and nutritious and available all year round. I read some information about the orange juice and here is what I can share.

Simple Beef Mami


This is the simple way of preparing beef mami. I hope you will try this recipe and let me know.

Ingredients for 6-8 servings:
1/2 kilo egg noodles or pancit ( blanched and set aside)
400 grams beef
1 onion
1 teaspoon peppercorn ( pamintang buo)
salt to taste
10 cloves garlic ( crushed and toasted for toppings)
1 cup minced spring onion ( for toppings)
4 hard boiled eggs ( cut into halves for toppings)
3 liters water
ground pepper


Procedure:

1. In a pot, put the water, beef, onion, and black pepper then then let it boil until the meat is tender.
2. Add salt to taste then continue to simmer then get some beef and slice it for toppings.
3. In a serving bowl arrange the noodles, egg, garlic, spring onion, and beef then pour the simmering soup.
4. Serve immediately and you can sprinkle ground pepper or any condiments and spices that you like for a more exciting taste :-).

Mely's Kitchen Macaroni Salad

Enjoy this macaroni salad from Mely's kitchen, economical yet yummy.

Ingredients:
1/2 kilo macaroni ( cook according to its packaging procedure)
1 apple ( diced)
1 cup raisins
1 cup corn kernel
1 cup Pineapple
2 cups condensed milk
3 cups Nestle cream
1 cup diced cheese

Procedure:
1. Combine all the ingredients and mix well, then refrigerate for few hours.
2. Serve and enjoy!



Bulcaching


During my college days ( Davao City)I remembered one eatery near my school where my friends and I used to eat because of their dish which they called "BULCACHING" the soup is really addicting, it is a combination of  beef shank and ox feet cooked until it i very tender, one of the food server said it's a combination of bulalo and balbacua, I am craving for that soup that's why I tried cooking it and wow gotcha! Yummy! You can try it too and see it for yourself.

Ingredients:
1/2 kilo beef shank
1/2 kilo ox feet ( paa ng baka)
1 onion
thumb size ginger ( crushed)
1 teaspoon whole black pepper
1/2 kilo Chinese cabbage or petsay
1/4 cup fish sauce ( patis)
water ( enough to make the meat tender and soupy)
chili ( siling haba)
Spring onion as needed
salt and pepper to taste

Procedure:
1. In a pressure cooker put the onion, black pepper, ginger, fish sauce, chili, ox feet and beef shanks, then turn on the stove to medium heat and wait until it starts to simmer. Let simmer until the pinkish color of the meat is gone then mix well and simmer again for another 5 minutes.
2. after this process increase the heat then add the water and simmer  for 30 minutes (pressure cooker) or if pressure cooker is not available simmer it for 90 minutes or until tender.
3. When the meat is tender add the Chinese cabbage, spring onion, salt and pepper then simmer for a minute and turn off the heat.
4. Serve it hot.

Cheesy Spaghetti

 This is an all time favorite of my family, the cheesy flavor will make you ask for more. Try this recipe even if you do not like spaghetti I believed you will find this palatable when you taste it.

Ingredients for 6 servings
1/2 kilo spaghetti ( cooked according to its packaging procedure)
4 cloves garlic
1 onion
1/4 kilo ground beef
2  cups tomato sauce
1 1/2 tablespoons sugar
1/2 cup Nestle Cream
1 cup grated cheese
pepper to taste


Procedure:
1. Saute the garlic and onion then add the ground beef and simmer for 5 minutes over medium heat.
2. Add the tomato sauce, sugar, and ground pepper then simmer for few  minutes
3. Add the Nestle cream and cheese then simmer until the cheese is melted then add the spaghetti and mix well.
4. Put in a serving plate then serve or you can  top with extra cheese before serving.

Prawns with Oyster Sauce

 This is simple and easy to prepare, but the oyster sauce made this dish so scrumptious. "Extra rice please " that's what we've said while eating this. :-)

Ingedients:
1/2 kilo prawn
1 onion
2 tomatoes
3 cloves garlic
2 tablespoons oyster sauce
ground pepper to taste
some spring onion

Procedure:
1. Saute the garlic, onion and tomatoes then add the prawns and stir until it turned dark oranged.
2. Add the oyster sauce, ground pepper and spring onion then simmer until cooked.
3. Serve it and do not forget to smile :-).
