Mely's Kitchen Chicken Curry



One of the spices that I like is curry powder, its aroma and taste really makes my taste buds react :-D mmmmmm mouth watering…that is why I love to use curry for some of my recipes.  And when it comes to curry dishes , chicken curry is my first choice, that is why I cooked it in many different ways, like this recipe, I put sausage and eggs as an extender. 

Ingredients:
1/2 kilo chicken
4 cloves garlic
1 small piece onion
thumb size ginger ( strips)
3 cups coconut milk
6 pieces hard boiled egg
1 piece regular size pepperoni ( can be replaced with hotdog)
2 tablespoons curry powder


Procedure:
1. Saute the ginger, then the garlic and the onion.
2. Put the curry powder and saute for few seconds to extract the aroma from it then add the chicken and salt then cover and let it simmer before stirring, then simmer again until it is cooked, mixing ever now and then( do not add water, because the chicken has its own juice).
3. Add the pepperoni and simmer for 3 minutes.
4.  Add  the coconut milk, cover until it is done.
5. Put the eggs and serve with love and a smile:)

Apple and carrot salad with cherries

Start your week with this nutritious and delicious energy booster salad.



Ingredients:
1 apple (diced)
1 carrot (diced)
some cherries
3 tablespoons all purpose cream


Procedure:
1. Mix together the carrot, apple and all purpose cream, mix it well.
2. Put in a serving bowl and top it with cherries
3. Chill it for an hour before serving..... Delicious!:-)

Chicken Igado



Igado is a popular dish which originated in Ilocos region but it is widely accepted in other parts of Philippines,  making igado one of the popular dishes. Originally it is made with pork meat, and liver. But I am inviting you to try this chicken igado recipe it is also yummy . I will post my original Ilocano recipe for pork igado soon God willing. Just try this chicken igado for today. Happy weekend everyone.:-)

Ingredients:
1/4 kilo chicken breast
1/4 kilo chicken gizzard (balumbalunan)
1/4 kilo chicken liver ( atay)
1 small size onion
4 cloves garlic
3 tablespoons vinegar
2 tablespoons soy sauce
1/4 teaspoon ground pepper
salt if necessary

Procedure:
1. Saute the garlic and onion, add the chicken breast and gizzard simmer for few minutes
2. Add the soy sauce, vinegar and ground pepper simmer until the flavor of the soy sauce and vinegar will be soaked by the meat.
3. Add the chicken liver simmer until done. add salt if necessary
4. Serve it hot.

Calabresa Acebolada


Calabresa acebolada is a Portuguese term which means pepperoni with onion, this is one of the popular dishes here in South America. It's a fast food item, lots of South Americans love to eat this with french bread,  I like this one with lots of onion and ground pepper.

Ingredientes:
2 Calabresa (rodelas)
2 Cebola (rodelas)
Óleo
pimenta-do-reino

Modo de preparo:
1.Coloque óleo em uma frigideira, o suficiente para fritar a linguiça e leve ao fogo
2. Ponha a lingüiça e cebola na frigideira com óleo
 coloque pimenta-do-reno, mexa todo junto.
3.Sirva em seguida :-).

For English version
Ingredients:
2 pieces regular size pepperoni
2 medium size onion
oil
ground pepper to taste

Procedure:
1. Saute the onion
2. Add the pepperoni, saute until it is cooked.
3. Dash with  pepper to taste.
4. Serve hot :-)


Food decoration 2

I am not good at this, but I just wanna share, so that you can get an idea for your gatherings just in case you want to have a little decoration for your food presentation. This apple swan will add attraction to your food. Here is how to do it.
First we need an apple.

Then cut a small portion to make it steady when we put it.
then cut 2 equal parts on both side living a space on top center side, as shown in the photo below

From the left side that we cut, we will cut 3 intersections from it, from small, smaller and smallest intersections, this will serve as a wing


Do the same at  the right side

then from the small part that we cut from the very beginning , form the neck and head part of the swan.

it will be like this or better:-)
then, we will push the left and right side to form as a wing and put the head using a toothpick, cut a little portion from the seed and use it as an eye for the head , here is our swan now, ready to add life to your food presentation.
You can now decorate your plates of food with this cute swan :-)
I hope you like it even if my creation is not perfect, at least you can get idea from it. :-)

Bruschetta


Bruschetta is an Italian appetizer which dates back around15 century, the main ingredient is toasted bread.
This is best for parties before serving your main dish or simply serve it as a snack.  You can serve this with different toppings and spices. Aside from its attractiveness it is also nutritious. So the next time you will have a gathering whatever the occasion is, have a touch of Italian cuisine. Serve bruschettas.

Ingredients:
4 toasted bread
1 tomato
1/2 medium size onion
1/4 cup celery
1 tablespoon olive oil
1 tablespoon minced garlic
salt and pepper to taste


Procedure:
1. Mix the olive oil and garlic rub each toasted bread with the mixture.
2. Diced the tomato, celery and onion mix these 3 together, dash with salt and pepper to taste.
3. Top each toasted bread with the mixture from procedure #2.
4. Serve it.


Buttered Mix veggies with ham

An economical and delicious dish that you will surely love. It's one of my friend's birthday when I cooked this.

Ingredients:
1/2 kilo ham ( diced)
4 pieces medium size potatoes (diced)
3 pieces medium size carrot (diced)
1 can regular size green peas
3 cloves garlic
1 medium size onion
salt and pepper to taste
2 tablespoons butter

Procedure:
1. In a pan heat the butter then saute garlic and onion
2. Add the ham and saute for few minutes
3. Add the carrots and potatoes cover and simmer for few minutes ( add a little water if necessary)
4. Add the green peas, salt and pepper to taste,  simmer until it is cooked.
5. Serve it hot or you can add some chopped spring onion for extra aroma and flavor.

You can add more carrots and potatoes if you want.

Stir Fried Chinese Cabbage



Chinese cabbage is a nutritious and delicious vegetable and often present in Chinese cuisine. I like the crispness of it and the juice that you can taste in every bite. I like stir frying vegetables because the natural color of it remained even if it is already cooked. Its the intense heat that gave that effect. I put cashew nut in this dish because I do not want to use meat, plus the oyster sauce , so its really delicious....glorious food :)


Ingredients:
1 kilo Chinese cabbage
1/2 cup Cashew nuts
1/4 cup Oyster sauce
1 small onion

Procedure:
1. Saute the onion, add the Chinese cabbage, increased the heat to stir fry it.
2. Then add the oyster sauce and cashew nuts stir fry until it is done
3. Serve it hot.

Chicken Cordon Bleu


Chicken cordon bleu is one of my favorites, I like it better with mushroom sauce mmmmmmm cheesy and creamy, crispy outside juicy and tasty inside. Cordon bleu means blue ribbon, maybe the original for this recipe they used blue ribbon to keep the chicken roulade intact instead of using toothpick. Enjoy your cooking.



Ingredients:
2 chicken breast
2 slices sweet ham
some cheese
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 egg (beaten)
1 cup bread crumbs


Procedure:
1.Mix the salt and pepper and rub it on the meat, do not rub too much so that it will not be salty.


2. Put the ham.
3. Put the cheese
4. Then roll into a roulade and secure it with a toothpick.


5. Dip it in beaten egg.
6. Roll over the bread crumbs.
7. Deep fry it until golden brown.
8. Remove the toothpicks then slice and serve it.




Cooking tips: To ensure that the middle part is well cooked, once starting to brownish lower the heat and allow to fry for few minutes, once almost cook increase the heat to attain a golden brown color.

Glorious ground beef


This recipe is easy to prepare  and affordable that is why I decided to make this one so that people out there who want to economize their budget can still eat meat. Here is one recipe that will fit your pockets.

Ingredients:
1/2 kilo ground beef
3 pieces medium size potatoes ( small dice)
1 piece medium size carrot (small dice)
1 small size onion
1 small size bell pepper ( small dice)
3 cloves garlic
salt and pepper to taste
hot chili pepper ( optional)


Procedure:
1 Saute garlic and onion.
2. Add the ground beef, simmer for few minutes
3. Add the salt and pepper simmer until the ground beef is cooked
4. Add the carrot and potatoes simmer for 3 minutes then add the bell pepper, simmer until it is done.
5. Serve it, or if you want something hot you can chop some hot chili peppers and sprinkle it on top.

Thai Fried Chicken

I missed the days when I was in Bangkok, Thailand. Walking along the streets, passing along food booths, smelling the aroma from their cooking, sometimes I even sneeze when I breathed the peppery smell in the air. Mmmmmm it tempted my taste buds to eat something, since I'm hungry from my work, I do not want to cook when I arrive at my place so I always buy something to eat before heading home and most of the time I have the thai fried chicken because I liked the crispy garlic on it. They use the middle part of the chicken wings for this, 10 thai baht is enough for me, munching the fried chicken while I am walking, until I reached my destination. ( around 15 minutes walk) :-). Here is the recipe for it.

Ingredients:
1/2 kilo chicken
1/4 cup fish sauce (patis)
juice from 1 lemon or 4 calamansi
 1/4 teaspoon Mono sodium glutamate ( vetsin)
5 cloves garlic (crushed)

Procedure:
1. Toast the garlic and set aside
2. In a bowl mix the chicken, fish sauce, lemon juice and vetsin set aside for an hour
3. Deep fried until golden brown
4. Serve it hot and sprinkled with toasted garlic.

Salad Combo


Just a simple vegetable salad which I think a healthy combination, to help my digestive system from all the meat that I ate for the past few days.

Ingredients:
Cherry tomatoes
Lettuce
Yellow bell pepper
watercress
1 lemon
3 tablespoons olive oil
salt to taste


Procedure:
1. Slice the bell pepper into rings
2. Arrange all the vegetables in a platter
3. Mix the olive oil and lemon together and pour it over the salad
4. Dash with salt and serve.


Ham and Cheese Sandwich


Delicious sandwich that I like a lot. Simple and easy to make and will definitely make you full.

Ingredients:
bread
ham
lettuce
cheese
liver spread


Procedure:
1. Slice the bread, put some  liver spread.
2. Arrange all the ingredients  properly.
3. Serve it with your favorite drinks

Hot and Spicy Braised Chicken


Last Monday my friends were craving for something hot and spicy, that is why I cooked  this recipe, it's really a bomb,  the chili hot flavor will tickle your taste buds mmmmmmmm mouth watering.


Ingredients:
1 kilo chicken
1 teaspoon chilli flakes
1 teaspoon whole black pepper or peppercorn
1/2 cup soy sauce
4 cloves garlic
1/4 teaspoon ground pepper
1 small onion
juice fom1/2 lemon or 3  calamansi

Procedure:
1. Saute the garlic and onion
2. Add the chicken and braise for few minutes.
3.Add the rest of the ingredients and simmer until it is cooked.
4. Serve it with rice. :-)

Classic Macaroni Salad


I grew up with this recipe, my older sisters loved to prepare this everytime they go home at the farm once a month from their schools at the city. During that time macaroni salad is already special for us, I always observing them everytime they are making macaroni salad, I was still young that time, maybe they do not know that I already memorize how to do it :-) its a colorful classic macaroni salad, there were green and red preserved sugar plums (kaong) I love to chew those things, so sad its not available here in my place making my salad looked plain but it's okey it is still yummy.

Ingredients:

1/2 kilo elbow macaroni
250ml nestle cream or light cream
1 cup cheese (diced)
1 cup pineapple tidbits
3/4 cup raisins
1 cup condensed milk
1 pack mayonaise (200 or 250 grams)

Procedure:
1. Cook the elbow macaroni according to its packaging procedure. Drained and set aside.
2. Mix all the ingredients.
3. Chill or put in the refrigerator before serving it.

Mixed salad

A healthy platter of salad for a lovely Friday. Preparing for a busy weekend? Well, we need an energy giving food and this salad is a good one to include in your meal. Lettuce alone is already full of nutrients that our body needs.  Have a happy weekend everyone :-).

Ingredients:
1 cup cubed watermelon
3/4 cup olives
1/4 kilo Lettuce
some cheese
1 tablespoon olive oil
1 tablespoon apple cider vinegar

Procedure:
1.  In a bowl mix the lettuce, vinegar and olive oil. Mix well
2. In a platter arrange all the ingredients and serve.

Simple Cassava cake


Cassava cake is one of the most popular Filipino delicacies. I'm glad that I was able to find ingredients for cassava cake in my place whewww!! It's been a long time that I am wanting to cook this, because of some friends' request. At last here it is! Simple and easy.

Ingredients:
3 glasses shredded cassava
1 glass coconut milk
1 glass condensed milk
Cassava
 for toppings:
1/2 cup shredded cheese.
1/2 cup condensed milk

Procedure:
1. Mix all the ingredients except the ones for toppings.
2. Preheat the oven at 200 C for 7 minutes, after 7 minutes reduce the heat at 180 C
3. Grease the baking pan with cooking oil before pouring the cassava cake mixture.

4. Bake it at 180 C  for 45 minutes or until golden brown.
5. When it is cooked, remove from oven and put the toppings , milk first then the cheese.
6. Bake for another few minutes until golden brown. ( around 5-10 minutes)

7. Serve it with your favorite drinks. :-)


Overstuffed potato


I tried this jacket potato without baking, the result is almost the same as baked ones, the only difference is... the potato skin on baked ones are crispy, it makes the potato skin easy to eat, but the taste is still the same, so to all my friends who do not have an oven you can try this one, it is yummy.

Ingredients:
4 big size potatoes
1/4 kilo ground beef
1 hotdog ( sliced)
1 small size bell pepper
1 small onion
3 cloves garlic
2 tablespoons soy sauce
1/4 cup tomato sauce
salt and pepper to taste

Procedure:

 For the filling:
1. Saute the garlic and onion, put the ground beef simmer for few minutes
2.  Add the rest of the ingredients and simmer until it is done.
3. Set aside.

For jacket potato:
1. Boil the potatoes until it is cooked, let it dry and set aside, or you can microwave it for 10-15 minutes or until it is cooked. ( Prick the potato skin with fork  before cooking it so that it will not pop)
2. Cut in the middle, just make a space for stuffing the filling
3. Put the filling and serve it , you can put grated cheese on top.

Pork hocks with Hoisin Sauce


Hoisin Sauce is a Chinise dipping sauce that can be used in cooking various meats and vegetables. Hoisin means seafood in Chinese. This sauce makes the meat and vegetables more flavorful, that is why I tried this recipe, and it really tastes good, you will ask for more. :-)

Ingredients:
1 kilo pork hocks ( pata)
3 tablespoons Hoisin Sauce
5 cloves garlic
1 small onion
1/4 cup soy sauce
2 cups pork broth ( soup from softened pork hocks)
spring onion for garnishing





Procedure:
1. Put the pork hocks in a pot and put enough water, bring to boil until the meat is tender. Drain and set aside. Do not forget to get 2 cups of broth.
2.  In a pan saute the garlic and onion then add the tender pork hocks, soy sauce and hoisin sauce simmer for few minutes.
3. Add the pork broth  and simmer until the sauce thickens.
4. Garnish it with spring onion and serve with rice.



Chow Mein with shiitake mushrooms


Chow mien is a Chinese term for stir fried noodles. Although it is of Chinese origin, chow mein is well known to different countries all over the world. It is the second most popular fast food in Nepal. There are different versions of Chow Mein, American Chinese cuisine has two versions, Canadian Chinese cuisine has three different versions and in different countries there are different versions, this one that I am sharing with you is the common version, I like this better than the crispy version, although crispy version is also yummy. It is easy to prepare, I hope you will like it.

Ingredients:
1/2 kilo egg noodles (pre-cooked with plain water and drained)
1 cup shiitake mushrooms  (sliced)
1/4 kilo shrimps ( cleaned and shelled)
1 small size onion
3 cloves garlic
1/4 kilo cabbage
1/4 cup soy sauce
1/4 cup water
1/4 teaspoon ground pepper

 Procedure:
1. Saute garlic and onion
2. Add the shrimps and shiitake mushrooms simmer for 1 minute
3. Add the soy sauce simmer for another minute then add the water and ground pepper
4. Increase the heat and add the noodles and cabbage, stir fry it until it is done.
5. Serve it hot.

Toasted Dilis=Dried Anchovies


Toasted dilis or dried anchovies is a common item in Filipino breakfast table. Once you tasted it, you will get addicted (^_^). It is one of my mom's favorites and always prepare this with fried rice and fried egg, now that really sounds yummy.

Ingredients:
1/2 cup dried anchovies ( toasted)
1 big size tomato ( diced)
1 small size onion (diced)
2 tablespoons vinegar

Procedure:
1.  Mix all the ingredients :-)
2. Serve it with your favorite breakfast partner.


Simple macaroons

I do not have plans of cooking macaroons today, but my best friend Malley, encourage me to cook with him, so I tried and it was a success! Thanks Malley for sharing this recipe. It is my first time to cook this, I recommend this recipe for all the beginners in cooking because this is so easy I am sure you can do it right

Ingredients:
100 grams dessicated coconut
1 cup white sugar
2 eggs

Procedure:
1.  Beat the eggs well.
2. Stir in the coconut and sugar until firm, and let it stand for 15 minutes.
3. Grease the baking tray and line  up the lump of macaroons to your desired size
4. Bake at 180 C until golden brown  ( around 15-20 minutes)
5. Let it cool and serve.

Garlic Fried Rice


A healthy fried rice for breakfast to start your day.

Ingredients:
2 cups rice
8 cloves garlic (minced)
olive oil

Procedure:
1. Heat the olive oil and toast the garlic until golden brown.
2. Stir in the rice and sprinkle with salt,  mix well until it's done.
3. Serve it hot.


Cucumber and pineapple salad

I am just curious if this two combination will taste good together so I tried, and the result is two thumbs up! :-) Try it!

Ingredients:
1 cucumber ( sliced)
1 cup pineapple tidbits
2 tablespoons fresh orange juice
oregano flakes
salt and pepper

Procedure:
1. Mix all the ingredients.
2. Serve it with fried fish or meat, or eat it as it is.
